SUMMARY

Assists the Dietary Manager with the planning, coordinating, and evaluating of the nutritional components of health care services for the residents of Valley Vista Care Center of Sandpoint.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

Works as a Cook and performs other tasks when needed.

Assists with daily organization of department operation. Works with all Dietary staff, addressing any concerns they may have. Be available to fill in shifts when needed.

Is responsible for ensuring a quality meal service for the residents.

Develops menus, production sheets, and order guides for residents. Periodically prepares and serves meals for residents to ensure quality.

Maintains documents showing residents likes, dislikes, diets, and allergy information.

Completes weekly update of all computer printouts of the following information: snack label, resident diet list, drink list updates, diet ticket updates.

Prepares food production sheets, dated, and posted. Assists with any production needs by cooks or aides, ex. proper portion size and appearance. Helps where needed to ensure meal quality in a timely manner.

Performs quality control and control of proper sanitation including weekly sanitation survey in the kitchen.

Reviews cleaning schedule and make sure all cleaning is done in kitchen and storeroom.

Prepares food order, inventory stock in dry areas and freezers. Maintains order in all food storage areas, and rotation of supplies.

Assists in orientation, on-the-job training, and in-service educational programs for personnel.

Attends IHCA trainings periodically.

Attends resident Care Conferences when assigned.

Prepares weekly RAR information.

Be able to work side-by-side with staff.

Completes Care Plan audits monthly.

Completes dining room seating audit weekly.

Understands and supports personnel policies.

Assists in implementing cost control procedures.

Makes recommendations which may be incorporated into policies and procedures.

Utilizes appropriate verbal and written communications and public relations, inter and intra departmentally.

CERTIFICATES, LICENSES, REGISTRATIONS

Must successfully complete the Food Handlers and ServSafe certifications. Is required to complete the necessary training and obtain certification as a Certified Dietary Manager (CDM) within a specified timeframe from date of hire/transfer. Certifications must be maintained in a current status.
